Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
Instructions
- Cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until just combined.
- In a separate bowl, whisk together flour, baking powder, and salt; gradually mix into the wet ingredients to form a smooth dough.
- For the chocolate dough, substitute part of the flour with cocoa powder.
- Divide each dough in half and shape into rectangles, wrap in plastic wrap, and refrigerate for at least one hour.
- Once chilled, roll each portion into ¼-inch thick rectangles.
- Layer the vanilla and chocolate dough, pressing down gently to eliminate air bubbles.
- Wrap the layered dough in plastic wrap and chill for another 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice the chilled dough into ¼-inch thick cookies and place them on the baking sheet.
- Bake for 10 to 12 minutes, or until edges are firm. Let cool on the sheet for 5 minutes before transferring to a wire rack.

Ensure butter and egg are at room temperature for best results. Don’t skip the chilling phases to maintain the cookie structure.
