Ingredients
- 1 pound cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup heavy cream or Greek yogurt
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic over medium heat until softened.
- Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes.
- Stir in the heavy cream or Greek yogurt just before serving.
- Garnish with chopped cilantro and serve hot.
