Description

A delicious and hearty dish combining tender chicken, creamy white beans, and corn, perfect for chilly days.


Ingredients

  • 1 pound cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream or Greek yogurt
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until softened.
  2. Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes.
