Description

Indulgent and satisfying, these cookies strike the perfect balance between thick and chewy, loaded with rich chocolate.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large cold egg
  • 2 teaspoons pure vanilla extract
  • 4 ounces chopped semi-sweet baking chocolate
  • 1 1/8 cups semi-sweet chocolate chips (plus extra for topping)
  • 3/4 cup coarsely chopped walnuts (optional)


Instructions

  1. Preheat the oven to 400°F and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream together cold butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Fold in chopped baking chocolate, chocolate chips (reserving some), and walnuts (if using).
  6. Gradually add the flour mixture, mixing on low until combined.
  7. Scoop dough into 10 portions and place on cookie sheets, pressing some reserved chocolate chips into the tops.
  8. Bake for 12 to 13 minutes until edges are golden brown.
  9. Allow cookies to cool on sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For best results, don’t overmix the dough and chill for 30 minutes if desired for thicker cookies.
