Indulgent and satisfying, these cookies strike the perfect balance between thick and chewy, loaded with rich chocolate.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large cold egg
- 2 teaspoons pure vanilla extract
- 4 ounces chopped semi-sweet baking chocolate
- 1 1/8 cups semi-sweet chocolate chips (plus extra for topping)
- 3/4 cup coarsely chopped walnuts (optional)
Instructions
- Preheat the oven to 400°F and line two cookie sheets with parchment paper.
- In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer, cream together cold butter, brown sugar, and granulated sugar until creamy.
- Add the egg and vanilla extract, mixing until combined.
- Fold in chopped baking chocolate, chocolate chips (reserving some), and walnuts (if using).
- Gradually add the flour mixture, mixing on low until combined.
- Scoop dough into 10 portions and place on cookie sheets, pressing some reserved chocolate chips into the tops.
- Bake for 12 to 13 minutes until edges are golden brown.
- Allow cookies to cool on sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For best results, don’t overmix the dough and chill for 30 minutes if desired for thicker cookies.
