Ingredients
- ½ cup dark cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ cup powdered sugar (for rolling)
- 1 teaspoon baking powder
- ¼ cup brown sugar
- ¾ cup granulated sugar
- ¼ teaspoon salt
- ¼ cup vegetable or canola oil
Instructions
- In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil until smooth and creamy.
- Add the eggs one at a time, mixing thoroughly between each addition, then stir in the vanilla extract.
- Gradually mix in dark cocoa powder, flour, baking powder, and salt until a thick dough forms.
- Transfer the dough to an airtight container and refrigerate for at least 4 hours or overnight.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the chilled dough into balls and coat each ball in powdered sugar.
- Arrange the dough balls on the prepared baking sheet, leaving enough space between them.
- Bake for 10 to 11 minutes; cookies may appear soft when removed from the oven.
- Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Notes
