Description

Ingredients

  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 3/4 cup salted butter, melted and cooled
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg + 1 egg yolk at room temperature
  • 3/4 cup semi-sweet chocolate chips or chunks
  • 3/4 cup bittersweet chocolate chips or chunks
  • Fleur de sel for garnish (optional)


Instructions

  1. In a large bowl, beat together melted butter, brown sugar, and granulated sugar until well incorporated.
  2. Add vanilla extract, egg, and egg yolk to the bowl, and beat until light and creamy.
  3. In a separate bowl, mix together flour, baking soda, corn starch, and salt.
  4. Gently fold the dry mixture into the wet ingredients until just combined.
  5. Stir in chocolate chips by hand, ensuring even distribution.
  6. Scoop approximately 1/4 cup of dough for each cookie, roll into balls, and place on a parchment-lined baking sheet. Freeze for 30 minutes.
  7. Preheat oven to 325°F (165°C).
  8. Bake for 10-12 minutes, rotating halfway through. Allow to cool for 5 minutes before transferring to a wire rack.

Notes

For best results, use room temperature eggs and don’t skip freezing the cookies before baking.
