Ingredients
- 2 1/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon corn starch
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- 3/4 cup salted butter, melted and cooled
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg + 1 egg yolk at room temperature
- 3/4 cup semi-sweet chocolate chips or chunks
- 3/4 cup bittersweet chocolate chips or chunks
- Fleur de sel for garnish (optional)
Instructions
- In a large bowl, beat together melted butter, brown sugar, and granulated sugar until well incorporated.
- Add vanilla extract, egg, and egg yolk to the bowl, and beat until light and creamy.
- In a separate bowl, mix together flour, baking soda, corn starch, and salt.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Stir in chocolate chips by hand, ensuring even distribution.
- Scoop approximately 1/4 cup of dough for each cookie, roll into balls, and place on a parchment-lined baking sheet. Freeze for 30 minutes.
- Preheat oven to 325°F (165°C).
- Bake for 10-12 minutes, rotating halfway through. Allow to cool for 5 minutes before transferring to a wire rack.
Notes
For best results, use room temperature eggs and don’t skip freezing the cookies before baking.
