- ½ teaspoon cornstarch
- 2 ¾ cups (220 grams) all-purpose flour
- 1-2 cups (170-340 grams) chocolate chips (dark, semisweet, or milk chocolate)
Instructions
- In a large bowl, mix brown sugar, white sugar, and brown butter, making sure to include the browned bits.
- Add vanilla extract and stir until combined, being careful not to over-mix.
- Whisk in the room-temperature eggs and the optional espresso powder.
- Add baking soda and cornstarch, mixing for 1-2 minutes without over-mixing.
- Gradually fold in flour one cup at a time until a playdough-like consistency is achieved.
- Add chocolate chips, mixing gently to avoid overworking the dough.
- Using an ice cream scoop, portion the dough onto a lined baking sheet.
- Preheat oven to 375°F (190°C) and bake for 11-12 minutes.
- Once baked, reshape cookies with a cup while warm to achieve a round shape.
