  • ½ teaspoon cornstarch
  • 2 ¾ cups (220 grams) all-purpose flour
  • 1-2 cups (170-340 grams) chocolate chips (dark, semisweet, or milk chocolate)


Instructions

  1. In a large bowl, mix brown sugar, white sugar, and brown butter, making sure to include the browned bits.
  2. Add vanilla extract and stir until combined, being careful not to over-mix.
  3. Whisk in the room-temperature eggs and the optional espresso powder.
  4. Add baking soda and cornstarch, mixing for 1-2 minutes without over-mixing.
  5. Gradually fold in flour one cup at a time until a playdough-like consistency is achieved.
