Ingredients
- 2/3 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup white sugar
- 1 tablespoon vanilla extract
- 2 large eggs
- 1/4 teaspoon espresso powder (optional)
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1 to 2 cups chocolate chips (semi-sweet, dark, or milk)
Instructions
- Prepare the brown butter by melting it in a saucepan over medium heat, stirring until it is a rich amber color and smells nutty.
- Mix the brown sugar and white sugar in a bowl, then pour the warm brown butter over them and whisk until combined.
- Add the vanilla extract, eggs, and espresso powder (if using) to the mixture and whisk until just incorporated.
- In a separate bowl, whisk together the baking soda, cornstarch, and flour.
- Gradually add the flour mixture to the wet ingredients, mixing until the dough is soft but not wet.
- Fold in the chocolate chips by hand, being careful not to overmix.
- Portion the dough onto a baking sheet lined with parchment and bake at 375°F for 11-12 minutes.
