Description
A refreshing and light salad combining the classic flavors of tzatziki sauce with crunchy cucumbers and fresh ingredients. Perfect as a snack, lunch, or side dish.
Ingredients
- 2 cups cucumbers, diced
- 1 cup plain yogurt (Greek or regular)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
- Wash and dice the cucumbers, peeling if desired.
- In a large bowl, mix the yogurt, minced garlic, olive oil, dill, lemon juice, salt, and pepper together.
- Add the diced cucumbers to the bowl and mix until well coated in the yogurt dressing.
- Taste the salad and adjust seasoning if necessary.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, use fresh herbs. Leftovers can be stored in an airtight container and are best eaten within 2-3 days.
