Description

Indulge in these deliciously thick and chewy chocolate chip cookies, perfect for any sweet craving.


Ingredients

  • 200 g Cold unsalted butter
  • 180 g Light brown sugar
  • 80 g White caster sugar
  • 2 large Eggs (at room temperature)
  • 1 tsp Vanilla extract
  • 250 g Self-raising flour
  • 150 g Plain flour
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 300 g Milk/white/dark chocolate chips


Instructions

  1. Cream the cold unsalted butter with light brown sugar and white caster sugar in a large mixing bowl until light and fluffy (about 3-5 minutes).
  2. Add eggs one at a time, mixing well after each and then incorporate the vanilla extract.
  3. In a separate bowl, whisk together self-raising flour, plain flour, salt, and baking powder, then gradually mix into the wet ingredients.
  4. Fold in the chocolate chips.
  5. Portion the dough onto a prepared baking sheet lined with parchment paper.
  6. Preheat oven to 180°C (350°F) and bake for 10–12 minutes until edges are golden.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For thicker cookies, refrigerate dough for at least 30 minutes before baking. Do not overbake for a chewy texture.
