Indulge in these deliciously thick and chewy chocolate chip cookies, perfect for any sweet craving.
Ingredients
- 200 g Cold unsalted butter
- 180 g Light brown sugar
- 80 g White caster sugar
- 2 large Eggs (at room temperature)
- 1 tsp Vanilla extract
- 250 g Self-raising flour
- 150 g Plain flour
- 1 tsp Salt
- 1 tsp Baking powder
- 300 g Milk/white/dark chocolate chips
Instructions
- Cream the cold unsalted butter with light brown sugar and white caster sugar in a large mixing bowl until light and fluffy (about 3-5 minutes).
- Add eggs one at a time, mixing well after each and then incorporate the vanilla extract.
- In a separate bowl, whisk together self-raising flour, plain flour, salt, and baking powder, then gradually mix into the wet ingredients.
- Fold in the chocolate chips.
- Portion the dough onto a prepared baking sheet lined with parchment paper.
- Preheat oven to 180°C (350°F) and bake for 10–12 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For thicker cookies, refrigerate dough for at least 30 minutes before baking. Do not overbake for a chewy texture.
