Ingredients
- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2-3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Toppings: Shredded cheese, sour cream, green onions, avocado slices, tortilla chips
Instructions
- Prep Your Ingredients: Start by chopping your vegetables and measuring out your ingredients.
- Brown the Meat: In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat.
- Sauté the Vegetables: Add diced onion and green bell pepper to the pot. Sauté until softened, about 5 minutes, then stir in minced garlic and cook for another minute.
- Build the Base: Sprinkle in chili powder, cumin, and paprika. Stir for a minute to release flavors.
- Add the Tomatoes and Broth: Pour in diced tomatoes, tomato sauce, and beef broth. Stir everything together.
- Let It Simmer: Bring to a boil, then reduce heat and let it simmer uncovered for about 30 minutes, stirring occasionally.
- Add the Beans: Stir in kidney beans and pinto beans. Let simmer for another 10-15 minutes.
- Taste and Adjust: Before serving, taste chili and add salt and pepper as needed. Add cayenne for more heat, if desired.
- Serve and Enjoy: Ladle into bowls and top with your favorite toppings.
Notes
For a deeper flavor, let the chili simmer longer. Adjust spice levels to your preference. Add vegetables like corn or zucchini for variety.
