Description

Delicious and easy Thai Peanut Chicken Wraps with creamy peanut sauce, tender chicken, and crunchy veggies wrapped in a tortilla.


Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice wine vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 1-2 Tbsp water (optional)
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 4-6 tortillas


Instructions

  1. In a small bowl or liquid measuring cup, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, garlic, ginger, and sriracha sauce. If you prefer a thinner sauce, you can add 1-2 tablespoons of water.
  2. In a large bowl, combine the chopped chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Pour the peanut dressing over the mixture and toss everything together to combine well. Let it sit for a few minutes to allow the flavors to mix.
  3. To make the tortillas easier to roll, heat them in the microwave for about 30 seconds.
  4. Divide the chicken and veggie mixture among the tortillas, wrap them tightly, and serve immediately.

Notes

For added crunch, consider including sliced bell peppers or cucumbers in the filling. You can substitute the chicken with tofu or shrimp for a different protein option. Adjust the spice level by adding more or less sriracha sauce according to your taste.
