Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup beef broth


Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute.
  4. Add the kidney beans, black beans, diced tomatoes, and beef broth. Bring to a simmer.
  5. Reduce the heat to low and let it simmer for at least 30 minutes, stirring occasionally.
  6. Taste and adjust the seasoning if necessary. Serve hot.

Notes

For extra flavor, top with shredded cheese, diced onions, or sour cream. Pairs well with warm bread or corn muffins.
