Description

Delightful lemon bars with a buttery shortbread crust and tangy lemon filling, perfect for any occasion.


Ingredients

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (2-3 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and powdered sugar together until smooth.
  3. Add in 1 cup of flour and mix until a dough forms. Press this into the bottom of a greased 9×9 inch baking dish.
  4. Bake the crust for about 20 minutes, or until lightly golden.
  5. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until well combined.
  6. Pour the lemon mixture over the warm crust and bake for an additional 25-30 minutes, or until set and edges are lightly browned.
  7. Let the bars cool completely in the baking dish and dust with powdered sugar before cutting.

Notes

Allow to cool completely for neat squares and can be stored in an airtight container in the refrigerator for up to a week.
