Description

Delightfully soft and chewy vanilla cookies that are easy to make and irresistible with a cup of tea or coffee.


Ingredients

  • 225g unsalted butter, at room temperature
  • 300g granulated sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 large egg, at room temperature
  • 320g all-purpose flour, sifted
  • 1 tsp (3g) kosher salt
  • ½ tsp baking soda
  • Granulated sugar for rolling


Instructions

  1. Preheat your oven to 350°F (180°C) and line 2-3 baking sheets with parchment paper.
  2. In a stand mixer, cream together the butter, granulated sugar, and vanilla until light and fluffy (3-5 minutes).
  3. Add the egg and mix until fully integrated.
  4. Sift the flour, salt, and baking soda together in a bowl.
  5. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. Using a cookie scoop, portion out balls of dough and roll in granulated sugar.
  7. Place on baking sheets and bake for 11-12 minutes until slightly set around the edges.
  8. Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, consider adding chocolate chips or nuts to the cookie dough. Store cookies in an airtight container for best freshness.
