Description
Delightfully soft and chewy vanilla cookies that are easy to make and irresistible with a cup of tea or coffee.
Ingredients
- 225g unsalted butter, at room temperature
- 300g granulated sugar
- 1 tsp vanilla bean paste or vanilla extract
- 1 large egg, at room temperature
- 320g all-purpose flour, sifted
- 1 tsp (3g) kosher salt
- ½ tsp baking soda
- Granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (180°C) and line 2-3 baking sheets with parchment paper.
- In a stand mixer, cream together the butter, granulated sugar, and vanilla until light and fluffy (3-5 minutes).
- Add the egg and mix until fully integrated.
- Sift the flour, salt, and baking soda together in a bowl.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Using a cookie scoop, portion out balls of dough and roll in granulated sugar.
- Place on baking sheets and bake for 11-12 minutes until slightly set around the edges.
- Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, consider adding chocolate chips or nuts to the cookie dough. Store cookies in an airtight container for best freshness.
