Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup uncooked rice
- 2 cups water
- Fresh herbs for garnish (parsley or thyme)
Instructions
- In a slow cooker, combine chicken breasts, lemon juice, lemon zest, olive oil, oregano, garlic powder, onion powder, salt, and pepper.
- Pour the chicken broth over the mixture.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
- About 30 minutes before serving, cook rice according to package instructions with the water.
- Once the chicken is cooked and tender, shred it in the slow cooker and stir it into the sauce.
- Serve the lemon herb chicken over fluffy rice and garnish with fresh herbs.
Notes
For extra flavor, marinate the chicken in lemon juice and spices for a few hours before cooking. Adjust seasoning to taste.
