Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup uncooked rice
  • 2 cups water
  • Fresh herbs for garnish (parsley or thyme)


Instructions

  1. In a slow cooker, combine chicken breasts, lemon juice, lemon zest, olive oil, oregano, garlic powder, onion powder, salt, and pepper.
  2. Pour the chicken broth over the mixture.
  3. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  4. About 30 minutes before serving, cook rice according to package instructions with the water.
  5. Once the chicken is cooked and tender, shred it in the slow cooker and stir it into the sauce.
  6. Serve the lemon herb chicken over fluffy rice and garnish with fresh herbs.

Notes
