A fresh and flavorful potato and cucumber salad dressed in creamy dill, perfect for picnics and barbecues.
Ingredients
- 3 medium potatoes
- 1 cucumber
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender. Drain and let them cool.
- Once cool, chop the potatoes into bite-sized pieces.
- Slice the cucumber thinly.
- In a bowl, whisk together sour cream, mayonnaise, dill, lemon juice, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the potatoes and cucumber, then pour the dressing over them.
- Gently toss to coat all the ingredients.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For added texture, consider including some chopped onions or bell peppers. Adjust seasoning to taste, and feel free to add garlic for extra flavor.
