Description

Delightful pastel-colored sugar cookie sandwiches filled with creamy vanilla filling, perfect for any festive occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the butter and sugar together until light and fluffy for about 2 minutes. Add the egg and vanilla extract, mixing until fully combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing on low speed until just combined. Add the milk and mix until well blended.
  4. Divide the dough into five equal portions and use gel food coloring to tint each portion a different pastel color.
  5. Scoop about 1 tablespoon of dough for each cookie, roll it into a ball, and place on the baking sheet about 2 inches apart. Bake for 8-10 minutes until the edges are set. Let cool for 5 minutes before transferring to a wire rack to cool completely.
  6. To make the filling, beat the butter until smooth, then gradually add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Beat until fluffy.
  7. Once cookies have cooled, assemble by spreading filling onto the flat side of one cookie and topping with another cookie.
  8. Let the assembled sandwiches sit for about 10 minutes to allow the filling to firm up.

Notes

Use softened butter for easy mixing. Don’t overbake the cookies to ensure they remain soft.
