Description
Delicious bite-sized cheesecake treats combining creamy cheesecake and crunchy Oreos, perfect for parties or a sweet dessert at home.
Ingredients
- 16 Oreos
- 16 ounces cream cheese; softened
- 1/2 cup sugar
- 2 whole eggs
- 1 tsp. vanilla extract
- 3/4 cup large and small Oreo cookie crumbs
Instructions
- Preheat oven to 350°F. Line a cupcake baking pan with paper liners and place one Oreo cookie in each liner.
- In a large mixing bowl, beat together the cream cheese, sugar, eggs, and vanilla extract with an electric mixer for 2-3 minutes until smooth.
- Fold in the Oreo cookie crumbs with a spatula until combined.
- Spoon the Oreo cheesecake mixture evenly on top of the Oreo cookies, about two tablespoons per cupcake cup. Sprinkle each cheesecake with more cookie crumbs.
- Bake for 14-16 minutes or until the middles are set. Let cool for at least 30 minutes, then remove the liners and refrigerate for at least 2 hours before serving.
Notes
Optional: Top with whipped cream and more crushed Oreos. Store in an airtight container for up to 5 days in the refrigerator, or freeze for up to 2 months.
