A comforting and satisfying one-pot chili that’s affordable and perfect for meal prep.
Ingredients
- 1 lb ground beef
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup beef broth
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, and sauté until soft.
- Add ground beef and cook until browned.
- Stir in the chili powder, cumin, salt, and pepper.
- Add the kidney beans, diced tomatoes, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Serve hot.
Notes
Top with shredded cheese, sour cream, or chopped green onions. Pairs well with cornbread or tortilla chips.
