Description

Delicious chocolate chip cookies made without butter, featuring a delightful chewiness and rich flavor.

Ingredients

  • 1/2 cup Vegetable oil (or coconut oil or canola oil)
  • 3/4 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 1 tsp Ground coffee
  • 1 Egg
  • 1 Egg yolk
  • 1 2/3 cups Flour (plus an additional 2 tbsp)
  • 1 tsp Baking soda
  • 1 cup Chocolate chips

Instructions

  1. In a large mixing bowl, combine the vegetable oil, granulated sugar, brown sugar, ground coffee, vanilla extract, and kosher salt. Whisk until smooth and well combined.
  2. Crack the egg and egg yolk into the mixture and stir well.
  3. Add the flour and baking soda, gently folding them into the wet mixture without overmixing.
  4. Stir in the chocolate chips until evenly distributed.
  5. Chill the dough in the fridge for at least 30 minutes.
  6. Preheat the oven to 350°F (180°C).
  7. Portion out the cookies using a cookie scoop or tablespoon, placing them on a parchment-lined baking sheet.
  8. Bake for 9-11 minutes until edges are golden brown. The centers should remain soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Allowing the dough to chill helps prevent spreading and enhances flavor. Consider sprinkling with flaky salt before serving.
