Delicious chocolate chip cookies made without butter, featuring a delightful chewiness and rich flavor.
Ingredients
- 1/2 cup Vegetable oil (or coconut oil or canola oil)
- 3/4 cup Brown sugar
- 1/4 cup Granulated sugar
- 1/2 tsp Kosher salt
- 2 tsp Vanilla extract
- 1 tsp Ground coffee
- 1 Egg
- 1 Egg yolk
- 1 2/3 cups Flour (plus an additional 2 tbsp)
- 1 tsp Baking soda
- 1 cup Chocolate chips
Instructions
- In a large mixing bowl, combine the vegetable oil, granulated sugar, brown sugar, ground coffee, vanilla extract, and kosher salt. Whisk until smooth and well combined.
- Crack the egg and egg yolk into the mixture and stir well.
- Add the flour and baking soda, gently folding them into the wet mixture without overmixing.
- Stir in the chocolate chips until evenly distributed.
- Chill the dough in the fridge for at least 30 minutes.
- Preheat the oven to 350°F (180°C).
- Portion out the cookies using a cookie scoop or tablespoon, placing them on a parchment-lined baking sheet.
- Bake for 9-11 minutes until edges are golden brown. The centers should remain soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Allowing the dough to chill helps prevent spreading and enhances flavor. Consider sprinkling with flaky salt before serving.
