Description

Delicious chocolate chip cookies made without butter, offering a healthier alternative without compromising on flavor or texture.


Ingredients

  • 1/2 cup Vegetable oil (or coconut oil or canola oil)
  • 3/4 cup Brown sugar (dark brown or light brown sugar)
  • 1/4 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 1 tsp Ground coffee
  • 1 Egg
  • 1 Egg yolk
  • 1 2/3 cups Flour (plus 2 tbsp)
  • 1 tsp Baking soda
  • 1 cup Chocolate chips


Instructions

  1. In a large mixing bowl, pour in the vegetable oil and mix with granulated sugar, brown sugar, ground coffee, vanilla extract, and kosher salt until smooth.
  2. Add the whole egg and egg yolk, mixing until well blended.
  3. Combine flour and baking soda in a separate bowl, then gradually add to the wet ingredients, mixing until almost combined.
  4. Fold in the chocolate chips gently, ensuring all dry mixture is incorporated.
  5. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes or overnight for best results.
  6. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  7. Scoop cookie dough (about 1.5 tablespoons each) onto the prepared baking sheet, spacing them evenly.
  8. Bake for 9-11 minutes until golden brown, then let cool on the sheet for 5 minutes before transferring to a wire rack.
