Description

Delicious chocolate cookies filled with a rich and flavorful espresso ganache, perfect for chocolate and coffee lovers.


Ingredients

  • 1 cup unsalted butter (softened)
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup dark chocolate chips (melted)
  • 1 tbsp instant espresso powder
  • 2 tbsp heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add in the egg and vanilla extract, ensuring everything is well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until fully combined.
  6. In a microwave-safe bowl, melt the chocolate chips. Add espresso powder and heavy cream to create a smooth filling.
  7. Scoop the cookie dough into small balls, flatten slightly, and add about a teaspoon of the mocha filling into the center.
  8. Seal the dough around the filling and place on the prepared baking sheet.
  9. Bake for 10-12 minutes until the edges are set but centers are slightly soft.
  10. Let the cookies cool slightly before enjoying.
