Delicious chocolate cookies filled with a rich and flavorful espresso ganache, perfect for chocolate and coffee lovers.
Ingredients
- 1 cup unsalted butter (softened)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup dark chocolate chips (melted)
- 1 tbsp instant espresso powder
- 2 tbsp heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
- Add in the egg and vanilla extract, ensuring everything is well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until fully combined.
- In a microwave-safe bowl, melt the chocolate chips. Add espresso powder and heavy cream to create a smooth filling.
- Scoop the cookie dough into small balls, flatten slightly, and add about a teaspoon of the mocha filling into the center.
- Seal the dough around the filling and place on the prepared baking sheet.
- Bake for 10-12 minutes until the edges are set but centers are slightly soft.
- Let the cookies cool slightly before enjoying.
Notes
Store cookies in an airtight container at room temperature for up to 3-4 days. They can also be refrigerated or frozen for longer storage.
