Description

A healthy and delicious Mediterranean dish with fresh vegetables, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 fillets of white fish (such as cod or tilapia)
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the fish fillets.
  3. Add the cherry tomatoes, bell pepper, red onion, and garlic around the fish.
  4. Drizzle olive oil over everything and season with salt and pepper.
  5. Top with lemon slices and olives.
  6. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  7. Garnish with fresh parsley before serving.

Notes

You can add other vegetables like zucchini or asparagus. For added heat, sprinkle some red pepper flakes on top.
