A healthy and delicious Mediterranean dish with fresh vegetables, perfect for weeknight dinners or special occasions.
Ingredients
- 4 fillets of white fish (such as cod or tilapia)
- 1 lemon, sliced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1/4 cup olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, arrange the fish fillets.
- Add the cherry tomatoes, bell pepper, red onion, and garlic around the fish.
- Drizzle olive oil over everything and season with salt and pepper.
- Top with lemon slices and olives.
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
You can add other vegetables like zucchini or asparagus. For added heat, sprinkle some red pepper flakes on top.
