Ingredients
- 2 salmon filets
- 1/4 cup sun-dried tomatoes
- 4 oz cream cheese
- 1/4 cup parmesan cheese
- 2 cups fresh spinach
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp herbs (e.g., basil, parsley)
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Heat olive oil in a skillet over medium heat. Season the salmon filets with salt and pepper, then sear them in the skillet until golden brown on each side.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes, sauté for a couple of minutes.
- Add cream cheese and parmesan cheese, stirring until melted and combined.
- Mix in the fresh spinach and herbs, cooking until the spinach is wilted.
- Return the salmon to the skillet, spooning the creamy sauce over the top.
- Cook for an additional 2-3 minutes until heated through.
- Serve warm with your favorite sides.
