Description

Ingredients

  • 2 salmon filets
  • 1/4 cup sun-dried tomatoes
  • 4 oz cream cheese
  • 1/4 cup parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp herbs (e.g., basil, parsley)
  • 1/2 tsp salt
  • 1/4 tsp pepper


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the salmon filets with salt and pepper, then sear them in the skillet until golden brown on each side.
  2. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes, sauté for a couple of minutes.
  4. Add cream cheese and parmesan cheese, stirring until melted and combined.
  5. Mix in the fresh spinach and herbs, cooking until the spinach is wilted.
  6. Return the salmon to the skillet, spooning the creamy sauce over the top.
  7. Cook for an additional 2-3 minutes until heated through.
