Description
A refreshing and crunchy Spicy Cucumber Salad that pairs perfectly with various dishes or can be enjoyed as a light snack.
Ingredients
- 2 medium cucumbers
- 2 tablespoons salt
- 2 tablespoons sugar
- 3 tablespoons rice vinegar
- 1 tablespoon Korean red pepper flakes (gochugaru)
- 2 garlic cloves, minced
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Instructions
- Wash the cucumbers and slice them thinly or into bite-sized pieces.
- Place the sliced cucumbers in a large bowl, sprinkle with salt, and mix well. Let them sit for about 10-15 minutes to draw out excess water.
- Drain any excess liquid from the cucumbers.
- In a separate bowl, combine sugar, rice vinegar, Korean red pepper flakes, minced garlic, and sesame oil. Mix well until the sugar dissolves.
- Pour the dressing over the cucumbers and toss until well coated.
- Add sesame seeds and chopped green onions; give it one final toss.
- Allow the salad to marinate for at least 30 minutes in the fridge for the best flavor.
Notes
Choose firm cucumbers for the best crunch and adjust the heat by modifying the amount of Korean red pepper flakes used.
