Delicious cappuccino cookies bursting with rich coffee flavors and complemented by sweet white chocolate.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon instant coffee granules
- 1 cup white chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, mix together the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and instant coffee granules.
- Gradually combine the dry ingredients with the wet ingredients until just blended.
- Fold in the white chocolate chips.
- Drop spoonfuls of the dough onto ungreased baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Best enjoyed fresh but can be stored at room temperature in an airtight container for up to 4 days.
