Description

Delicious cappuccino cookies bursting with rich coffee flavors and complemented by sweet white chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant coffee granules
  • 1 cup white chocolate chips
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, mix together the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and instant coffee granules.
  5. Gradually combine the dry ingredients with the wet ingredients until just blended.
  6. Fold in the white chocolate chips.
  7. Drop spoonfuls of the dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Best enjoyed fresh but can be stored at room temperature in an airtight container for up to 4 days.
