Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon instant coffee granules
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until smooth and creamy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Dissolve the instant coffee granules in 1 tablespoon of hot water and add to the batter.
  5. In another bowl, combine the all-purpose flour, baking soda, and salt, and gradually mix into the creamed mixture.
  6. Fold in the white chocolate chips.
  7. Drop rounded spoonfuls of cookie dough onto ungreased baking sheets, leaving enough space between each cookie.
  8. Bake for 10 to 12 minutes until lightly golden around the edges. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks.
