Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon instant coffee granules
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until smooth and creamy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Dissolve the instant coffee granules in 1 tablespoon of hot water and add to the batter.
- In another bowl, combine the all-purpose flour, baking soda, and salt, and gradually mix into the creamed mixture.
- Fold in the white chocolate chips.
- Drop rounded spoonfuls of cookie dough onto ungreased baking sheets, leaving enough space between each cookie.
- Bake for 10 to 12 minutes until lightly golden around the edges. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks.
