Delightful homemade Biscoff cookies topped with creamy cookie butter, perfect for any occasion.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup Biscoff spread
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Cookie butter for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Mix in the Biscoff spread.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Drop heaping tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden brown.
- Allow to cool slightly before transferring to a wire rack.
- Once cooled, spread a layer of cookie butter on top of each cookie.

Store cookies in an airtight container. They can be frozen for up to 2 months.
