Description

Creamy and cheesy mashed potatoes infused with the rich flavors of French onion soup.


Ingredients

  • 4 large potatoes
  • 2 large onions
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 cup Gruyere cheese, grated
  • Salt and pepper to taste
  • 1/2 cup milk or cream


Instructions

  1. Peel and cut the potatoes into chunks. Boil in salted water until tender, then drain and mash.
  2. In a pan over medium heat, heat olive oil and butter, then add sliced onions. Cook until caramelized, about 20-30 minutes.
  3. Add thyme, salt, and pepper to the caramelized onions.
  4. Mix the caramelized onions into the mashed potatoes.
  5. Stir in the milk or cream and half the Gruyere cheese.
  6. Transfer to a baking dish, top with remaining Gruyere cheese, and bake in a preheated oven at 375°F (190°C) until golden and bubbly, about 25-30 minutes.

Notes

For a lighter version, substitute heavy cream with low-fat milk.
