Description
Creamy and cheesy mashed potatoes infused with the rich flavors of French onion soup.
Ingredients
- 4 large potatoes
- 2 large onions
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 cup Gruyere cheese, grated
- Salt and pepper to taste
- 1/2 cup milk or cream
Instructions
- Peel and cut the potatoes into chunks. Boil in salted water until tender, then drain and mash.
- In a pan over medium heat, heat olive oil and butter, then add sliced onions. Cook until caramelized, about 20-30 minutes.
- Add thyme, salt, and pepper to the caramelized onions.
- Mix the caramelized onions into the mashed potatoes.
- Stir in the milk or cream and half the Gruyere cheese.
- Transfer to a baking dish, top with remaining Gruyere cheese, and bake in a preheated oven at 375°F (190°C) until golden and bubbly, about 25-30 minutes.
Notes
For a lighter version, substitute heavy cream with low-fat milk.
