Description

Deliciously soft and chewy peanut butter cookies that bring back sweet memories of childhood, perfect for any occasion.


Ingredients

  • 1 cup (256 g) smooth peanut butter
  • 16 tablespoons (226 g) unsalted butter, room temperature
  • 1 1/3 cup (293 g) packed dark brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon (13 g) real vanilla extract
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 1/4 cups (304 g) all-purpose flour


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking sheets.
  2. In a large bowl, combine peanut butter and unsalted butter, then mix in both sugars until smooth.
  3. Add vanilla extract and eggs, mixing until fully incorporated.
  4. In a separate bowl, whisk together baking powder, baking soda, sea salt, and flour.
  5. Gradually mix the dry ingredients into the wet until a soft dough forms.
  6. Scoop tablespoon-sized amounts of dough, roll into balls, and place on baking sheets with space in between.
  7. Optionally, sprinkle sea salt on top of each ball.
  8. Bake for 10 to 12 minutes until edges are set; let cool before transferring to wire racks.

Notes

For a chewier cookie, avoid overbaking. Chilling the dough for 30 minutes can help with thicker cookies.
