Ingredients
- 1 cup (256 g) smooth peanut butter
- 16 tablespoons (226 g) unsalted butter, room temperature
- 1 1/3 cup (293 g) packed dark brown sugar
- 1/2 cup (100 g) granulated sugar
- 1 tablespoon (13 g) real vanilla extract
- 2 large eggs, room temperature
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 2 1/4 cups (304 g) all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking sheets.
- In a large bowl, combine peanut butter and unsalted butter, then mix in both sugars until smooth.
- Add vanilla extract and eggs, mixing until fully incorporated.
- In a separate bowl, whisk together baking powder, baking soda, sea salt, and flour.
- Gradually mix the dry ingredients into the wet until a soft dough forms.
- Scoop tablespoon-sized amounts of dough, roll into balls, and place on baking sheets with space in between.
- Optionally, sprinkle sea salt on top of each ball.
- Bake for 10 to 12 minutes until edges are set; let cool before transferring to wire racks.
Notes
For a chewier cookie, avoid overbaking. Chilling the dough for 30 minutes can help with thicker cookies.
