Delightful and chewy oatmeal cookies perfect for an afternoon snack or casual get-together.
Ingredients
- 1 cup quick oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, combine quick oats, flour, baking soda, and salt, then stir to mix.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Drop spoonfuls of cookie dough onto a lined baking sheet, leaving space in between.
- Bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For softer cookies, remove from the oven while still slightly underbaked. Store in an airtight container for up to 3 days, or freeze for longer storage.
