Description

Enjoy the nostalgic flavors of s’mores in a chewy cookie form, combining chocolate, marshmallows, and graham crackers.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup chocolate chips
  • 1 cup crushed graham crackers


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until nice and creamy.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, mixing until combined.
  5. Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers.
  6. Drop rounded tablespoons of the dough onto a baking sheet lined with parchment paper, leaving space between each dollop.
  7. Bake for 10-12 minutes, or until the edges appear lightly golden. The centers should look slightly underbaked.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container for up to 4 days at room temperature, or refrigerate for up to a week. These cookies also freeze well for up to two months.
