Enjoy the nostalgic flavors of s’mores in a chewy cookie form, combining chocolate, marshmallows, and graham crackers.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups mini marshmallows
- 1 cup chocolate chips
- 1 cup crushed graham crackers
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until nice and creamy.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, mixing until combined.
- Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers.
- Drop rounded tablespoons of the dough onto a baking sheet lined with parchment paper, leaving space between each dollop.
- Bake for 10-12 minutes, or until the edges appear lightly golden. The centers should look slightly underbaked.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container for up to 4 days at room temperature, or refrigerate for up to a week. These cookies also freeze well for up to two months.
