A light and refreshing salad featuring crisp cucumbers and a creamy Greek yogurt dressing, perfect for warm days.
Ingredients
- 2 Persian cucumbers, thinly sliced
- ⅓ cup red onion, thinly sliced (about ¼ of an onion)
- ½ cup plain Greek yogurt
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 garlic clove, minced
- 2 Tbsp fresh dill, chopped
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Make the dressing by mixing the Greek yogurt, garlic, chopped dill, lemon juice, olive oil, salt, and black pepper together in a bowl. Set it aside.
- Toss the sliced cucumbers and onions in a large bowl, pour the dressing over the top, and toss until the salad is coated to your liking. Taste and adjust the salt and pepper if needed.
- Serve immediately and enjoy!
Notes
Best served chilled. For extra crunch, consider adding chopped bell peppers or celery.
