A refreshing and healthy Cucumber Carrot Salad that can be made in just a few minutes, perfect for picnics and quick side dishes.
Ingredients
- 2 cucumbers
- 2 carrots
- 1/4 red onion
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- Salt to taste
- Pepper to taste
- Optional: fresh herbs (like parsley or dill)
Instructions
- Peel the cucumbers and carrots, then slice them into thin rounds or julienne them.
- Finely chop the red onion.
- In a large bowl, combine the cucumbers, carrots, and red onion.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Add fresh herbs if desired.
- Serve immediately or chill in the refrigerator for 30 minutes.
Notes
For extra crunch, try adding some chopped bell peppers or radishes. Use a mandoline slicer for uniform slices.
