Description

Delightful, soft, and buttery red velvet cookies topped with rich cream cheese frosting.

Ingredients

  • 1/2 cup unsalted butter (113g), softened
  • 1/3 cup granulated sugar (70g)
  • 1/3 cup light brown sugar (65g)
  • 1 large egg
  • 1 tsp vinegar
  • 1-2 tsp red gel food color
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour (163g)
  • 2-3 tbsp natural cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 6 oz cream cheese (170g), softened
  • 1 cup icing sugar

Instructions

  1. In a mixing bowl, whisk together the softened butter, granulated sugar, and brown sugar until fluffy.
  2. Add the egg, vinegar, red gel food color, and vanilla extract to the mixture and mix well.
  3. Sift in the flour, cocoa powder, baking soda, baking powder, and salt. Gently fold until just combined.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for 15-20 minutes.
  5. Preheat your oven to 375°F (190°C) and prepare a cookie sheet with parchment paper.
  6. Shape the chilled dough into balls and slightly flatten them before placing on the cookie sheet.
  7. Bake for 10-11 minutes until set but still soft, then cool before frosting.
  8. For the frosting, beat the softened cream cheese and butter until creamy, then gradually mix in icing sugar until smooth.
  9. Once cookies are cool, frost them with the cream cheese frosting and add crushed red velvet crumbs if desired.
