Delightful, soft, and buttery red velvet cookies topped with rich cream cheese frosting.
Ingredients
- 1/2 cup unsalted butter (113g), softened
- 1/3 cup granulated sugar (70g)
- 1/3 cup light brown sugar (65g)
- 1 large egg
- 1 tsp vinegar
- 1-2 tsp red gel food color
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour (163g)
- 2-3 tbsp natural cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 6 oz cream cheese (170g), softened
- 1 cup icing sugar
Instructions
- In a mixing bowl, whisk together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add the egg, vinegar, red gel food color, and vanilla extract to the mixture and mix well.
- Sift in the flour, cocoa powder, baking soda, baking powder, and salt. Gently fold until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for 15-20 minutes.
- Preheat your oven to 375°F (190°C) and prepare a cookie sheet with parchment paper.
- Shape the chilled dough into balls and slightly flatten them before placing on the cookie sheet.
- Bake for 10-11 minutes until set but still soft, then cool before frosting.
- For the frosting, beat the softened cream cheese and butter until creamy, then gradually mix in icing sugar until smooth.
- Once cookies are cool, frost them with the cream cheese frosting and add crushed red velvet crumbs if desired.
