A quick and easy veggie bake that’s perfect for lazy days, customizable with whatever you have at home.
Ingredients
- 3 cups of your favorite veggies
- 2 cups of cheese
- 1 cup of breadcrumbs
- 2 eggs
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
Instructions
- Preheat your oven to 375°F.
- Chop the veggies into bite-sized pieces.
- In a large bowl, mix the chopped veggies, cheese, breadcrumbs, eggs, salt, pepper, and garlic powder.
- Scoop the mixture into a greased baking dish.
- Bake for about 25-30 minutes until golden brown.
- Remove from oven and let cool for a few minutes.
- Cut into squares and serve.
Notes
Feel free to customize with different veggies, cheeses, or breadcrumbs. Can be made vegan by substituting eggs with flaxseed or chia seeds.
