Description
Crispy and tender Bang Bang Salmon Bites coated in a flavorful spicy sauce, perfect for appetizers or weeknight dinners.
Ingredients
- 1 lb fresh salmon (skinless, cut into bite-sized cubes)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil (or spray for crisping)
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to spice level)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat your oven to 400°F (200°C) or set the air fryer to a similar temperature.
- In a bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Add the panko breadcrumbs to the salmon and gently mix until the salmon is covered in breadcrumbs. Lightly spray with olive oil or drizzle some for added crispness.
- For baking, place the salmon bites on a lined baking sheet and bake for 12-15 minutes until golden and cooked through. For air frying, place them in a single layer and air-fry for 7-10 minutes, shaking the basket halfway through.
- In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Mix well until smooth.
- Serve the salmon bites over jasmine rice (or cauliflower rice) and top with shredded cabbage, avocado, shredded carrots, and green onions. Drizzle the bang bang sauce over everything and garnish with fresh cilantro and sesame seeds.
Notes
Make sure the salmon is dry before seasoning for better breadcrumb adherence. Adjust sriracha to your desired spice level.
