A delightful dish featuring tender salmon fillets topped with a rich, creamy sauce, fresh spinach, and juicy tomatoes.
Ingredients
- 4 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs (such as parsley or dill) for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the salmon fillets with salt, pepper, and dried oregano, then add them to the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds.
- Add the cherry tomatoes and fresh spinach, cooking until the spinach wilts.
- Pour in the heavy cream and stir; let it simmer for a couple of minutes until slightly thickened.
- Return the salmon to the skillet, spooning the creamy sauce over the top.
- Serve hot, garnished with fresh herbs.
Notes
For the best flavor, use fresh herbs for garnish. Pair with steamed rice, quinoa, or crusty bread.
