Description

A delightful dish featuring tender salmon fillets topped with a rich, creamy sauce, fresh spinach, and juicy tomatoes.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the salmon fillets with salt, pepper, and dried oregano, then add them to the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds.
  5. Add the cherry tomatoes and fresh spinach, cooking until the spinach wilts.
  6. Pour in the heavy cream and stir; let it simmer for a couple of minutes until slightly thickened.
  7. Return the salmon to the skillet, spooning the creamy sauce over the top.
  8. Serve hot, garnished with fresh herbs.

Notes

For the best flavor, use fresh herbs for garnish. Pair with steamed rice, quinoa, or crusty bread.
