Description
A refreshing and creamy cucumber salad, perfect for hot days and as a side dish.
Ingredients
- 1 cucumber, thinly sliced
- 2 shallots, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp Greek yogurt (vegan option available)
- 1.5 tbsp mayonnaise (vegan option available)
- 1 handful fresh dill, chopped
- 1 lemon, juiced
- 1 pinch salt
- 1/2 tsp sugar
Instructions
- Slice the cucumber thinly into a large lidded jar or tub. A mandolin can help with this, but be careful when using it!
- Add the rest of the ingredients to the jar or tub.
- Put the lid on and shake well until the cucumber slices are coated in the creamy sauce.
- Enjoy the salad straight away!
Notes
For an extra kick, add a sprinkle of red pepper flakes. Let the salad chill in the fridge for about 30 minutes to enhance flavors.
