Description

A refreshing and creamy cucumber salad, perfect for hot days and as a side dish.


Ingredients

  • 1 cucumber, thinly sliced
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp Greek yogurt (vegan option available)
  • 1.5 tbsp mayonnaise (vegan option available)
  • 1 handful fresh dill, chopped
  • 1 lemon, juiced
  • 1 pinch salt
  • 1/2 tsp sugar


Instructions

  1. Slice the cucumber thinly into a large lidded jar or tub. A mandolin can help with this, but be careful when using it!
  2. Add the rest of the ingredients to the jar or tub.
  3. Put the lid on and shake well until the cucumber slices are coated in the creamy sauce.
  4. Enjoy the salad straight away!

Notes

For an extra kick, add a sprinkle of red pepper flakes. Let the salad chill in the fridge for about 30 minutes to enhance flavors.
