Description

Delicious gluten-free chocolate chip cookies that are gooey, comforting, and easy to make.


Ingredients

  • 1 cup (226g) butter, room temperature
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (270g) gluten-free measure-for-measure flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups (540g) chocolate chips or chunks
  • Flaky sea salt, for sprinkling (optional)


Instructions

  1. Cream butter, granulated sugar, and brown sugar together until light and fluffy.
  2. Mix in eggs one at a time and then add the vanilla extract.
  3. In another bowl, combine the dry ingredients: gluten-free flour, baking powder, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Fold in chocolate chips until evenly distributed.
  6. Chill the dough for 30 minutes to overnight.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop and roll dough into 1 1/2 tablespoon balls, placing on the prepared baking sheets.
  9. Bake for 8 to 10 minutes, until edges are golden and centers are slightly undercooked.
  10. Sprinkle with flaky sea salt if desired and let cool on a rack.
  11. Store leftovers in an airtight container.

Notes

Allow butter to soften at room temperature for better texture. Experiment with different chocolate types for unique flavors.
