Delightful bars combining the flavors of cinnamon rolls with the crumbly texture of shortbread, perfect for gatherings.
Ingredients
- 1 cup butter (softened)
- 3/4 cup superfine white sugar (caster sugar)
- 1 tablespoon pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon turbinado sugar
- 1/4 cup softened butter
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup cream cheese
- 1/2 cup butter
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together 1 cup softened butter and 3/4 cup superfine white sugar until light and fluffy.
- Add 1 tablespoon of pure vanilla extract, mix well.
- Gradually incorporate 2 1/2 cups all-purpose flour and 1/4 teaspoon salt until just combined.
- Press the dough into a greased baking pan and bake for 20-25 minutes, or until the edges are lightly golden.
- In another bowl, combine 1/4 cup softened butter, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon vanilla extract. Mix until smooth.
- Spread the cinnamon mixture evenly over the crust once it’s cooled for about 10 minutes.
- Return the pan to the oven and bake for an additional 15-20 minutes until set.
- In a separate bowl, beat together 1/4 cup cream cheese, 1/2 cup softened butter, 1 cup powdered sugar, and 2 teaspoons vanilla extract until creamy.
- Once the bars have completely cooled, spread the frosting over the top.
- Slice into squares, and enjoy!
Notes
Store the bars in an airtight container at room temperature for up to 3 days or in the refrigerator for about 5-7 days. They can also be frozen for up to 2 months.
