Description

Delightful bars combining the flavors of cinnamon rolls with the crumbly texture of shortbread, perfect for gatherings.


Ingredients

  • 1 cup butter (softened)
  • 3/4 cup superfine white sugar (caster sugar)
  • 1 tablespoon pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon turbinado sugar
  • 1/4 cup softened butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup cream cheese
  • 1/2 cup butter
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together 1 cup softened butter and 3/4 cup superfine white sugar until light and fluffy.
  3. Add 1 tablespoon of pure vanilla extract, mix well.
  4. Gradually incorporate 2 1/2 cups all-purpose flour and 1/4 teaspoon salt until just combined.
  5. Press the dough into a greased baking pan and bake for 20-25 minutes, or until the edges are lightly golden.
  6. In another bowl, combine 1/4 cup softened butter, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon vanilla extract. Mix until smooth.
  7. Spread the cinnamon mixture evenly over the crust once it’s cooled for about 10 minutes.
  8. Return the pan to the oven and bake for an additional 15-20 minutes until set.
  9. In a separate bowl, beat together 1/4 cup cream cheese, 1/2 cup softened butter, 1 cup powdered sugar, and 2 teaspoons vanilla extract until creamy.
  10. Once the bars have completely cooled, spread the frosting over the top.
  11. Slice into squares, and enjoy!

Notes

Store the bars in an airtight container at room temperature for up to 3 days or in the refrigerator for about 5-7 days. They can also be frozen for up to 2 months.
