Ingredients
- 1 cup softened butter
- 3/4 cup superfine sugar
- 1 tablespoon pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup softened butter (for filling)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract (for filling)
- 1 tablespoon turbinado sugar
- 1/4 cup cream cheese (softened)
- 1/2 cup butter (for frosting)
- 1 cup powdered sugar
- 2 teaspoons vanilla extract (for frosting)
Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, beat 1 cup softened butter with 3/4 cup superfine sugar until light and fluffy.
- Mix in 1 tablespoon vanilla extract.
- Whisk together 2 1/2 cups flour and 1/4 teaspoon salt; gradually add to the butter mixture until a dough forms.
- Press dough into a lined 9×13 inch baking dish and bake for 20-25 minutes until edges are golden.
- For the filling, mix 1/4 cup softened butter, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon vanilla extract until creamy.
- Spread filling over cooled shortbread and sprinkle with 1 tablespoon turbinado sugar.
- Bake for another 15-20 minutes until filling is bubbly.
- For frosting, beat 1/4 cup softened cream cheese with 1/2 cup butter until smooth.
- Gradually add 1 cup powdered sugar and 2 teaspoons vanilla extract; mix until creamy.
- Spread frosting over cooled bars and chill for 30 minutes to set before serving.
