Ingredients

  • 1 cup softened butter
  • 3/4 cup superfine sugar
  • 1 tablespoon pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup softened butter (for filling)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract (for filling)
  • 1 tablespoon turbinado sugar
  • 1/4 cup cream cheese (softened)
  • 1/2 cup butter (for frosting)
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract (for frosting)


Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, beat 1 cup softened butter with 3/4 cup superfine sugar until light and fluffy.
  3. Mix in 1 tablespoon vanilla extract.
  4. Whisk together 2 1/2 cups flour and 1/4 teaspoon salt; gradually add to the butter mixture until a dough forms.
  5. Press dough into a lined 9×13 inch baking dish and bake for 20-25 minutes until edges are golden.
  6. For the filling, mix 1/4 cup softened butter, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon vanilla extract until creamy.
  7. Spread filling over cooled shortbread and sprinkle with 1 tablespoon turbinado sugar.
  8. Bake for another 15-20 minutes until filling is bubbly.
  9. For frosting, beat 1/4 cup softened cream cheese with 1/2 cup butter until smooth.
  10. Gradually add 1 cup powdered sugar and 2 teaspoons vanilla extract; mix until creamy.
  11. Spread frosting over cooled bars and chill for 30 minutes to set before serving.

Store in an airtight container in the fridge for up to 4-5 days or freeze for longer storage.
