Description

Delightful cookies that merge the flavors of cinnamon rolls into a soft, chewy treat with a gooey filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup packed brown sugar (for filling)
  • 2 teaspoons ground cinnamon (for filling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the egg and vanilla extract. Gradually mix in the dry ingredients until just combined.
  5. In a small bowl, mix together the brown sugar and ground cinnamon for the filling.
  6. Spread half of the dough into a rectangular shape on parchment paper, sprinkle with the filling, and roll tightly into a log.
  7. Slice the log into rounds and place them on a parchment-lined baking sheet.
  8. Bake in the preheated oven for about 10-12 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
