Delightful cookies that merge the flavors of cinnamon rolls into a soft, chewy treat with a gooey filling.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- ½ cup packed brown sugar (for filling)
- 2 teaspoons ground cinnamon (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- In another bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract. Gradually mix in the dry ingredients until just combined.
- In a small bowl, mix together the brown sugar and ground cinnamon for the filling.
- Spread half of the dough into a rectangular shape on parchment paper, sprinkle with the filling, and roll tightly into a log.
- Slice the log into rounds and place them on a parchment-lined baking sheet.
- Bake in the preheated oven for about 10-12 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.

Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 1 week, or freeze for up to 3 months.
