Description

A delicious burrito filled with grilled chicken, vibrant vegetables, and chipotle ranch dressing.


Ingredients

  • 2 chicken breasts
  • 1 cup cooked rice
  • 1 cup black or pinto beans
  • 1 cup fresh vegetables (lettuce, tomatoes, onions, etc.)
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Smoky spices (cumin, paprika, garlic powder)
  • Salt and pepper to taste


Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with smoky spices, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  5. In a bowl, combine the cooked rice, beans, and fresh vegetables.
  6. Lay a tortilla flat and place a portion of the rice and bean mixture in the center.
  7. Add sliced grilled chicken on top and drizzle with chipotle ranch dressing.
  8. Fold in the sides of the tortilla and roll it up tightly.
  9. Repeat with the remaining tortillas and filling.
  10. Serve immediately with extra chipotle ranch dressing on the side.

Notes

For added flavor, marinate the chicken in chipotle ranch dressing for a few hours before grilling. You can also customize your burrito with your favorite vegetables.
