Description
A delicious burrito filled with grilled chicken, vibrant vegetables, and chipotle ranch dressing.
Ingredients
- 2 chicken breasts
- 1 cup cooked rice
- 1 cup black or pinto beans
- 1 cup fresh vegetables (lettuce, tomatoes, onions, etc.)
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Smoky spices (cumin, paprika, garlic powder)
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with smoky spices, salt, and pepper.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- In a bowl, combine the cooked rice, beans, and fresh vegetables.
- Lay a tortilla flat and place a portion of the rice and bean mixture in the center.
- Add sliced grilled chicken on top and drizzle with chipotle ranch dressing.
- Fold in the sides of the tortilla and roll it up tightly.
- Repeat with the remaining tortillas and filling.
- Serve immediately with extra chipotle ranch dressing on the side.
Notes
For added flavor, marinate the chicken in chipotle ranch dressing for a few hours before grilling. You can also customize your burrito with your favorite vegetables.
