Description

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Gather all ingredients and chop the vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to package instructions until al dente; drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add some oil and sauté the chicken until it is golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet.
  4. In the same pan, stir-fry the bell peppers, carrots, and green onions until they are tender yet crisp, about 3-4 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Add the Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices. Toss everything together until well mixed.
  6. Serve hot with extra soy sauce if desired.

Notes

Use fresh vegetables for the best flavor and crunch. Adjust the amount of soy sauce based on your salt preference; you can always add more later! If you like it spicy, add some red pepper flakes or Sriracha sauce.
