Ingredients
- 1/2 cup unsalted butter, softened
- 2/3 cup light brown sugar
- 1/8 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cup quick cooking oats
- 1 cup chocolate chips
Instructions
- In a large bowl, cream together the softened butter, light brown sugar, white sugar, egg, and vanilla extract until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the butter-sugar mixture, blending until fully combined.
- Stir in the quick cooking oats and chocolate chips.
- Chill the dough in the fridge for at least 1 hour.
- Preheat the oven to 350°F (175°C) and prepare a baking sheet.
- Scoop and place the dough into round balls on the baking sheet, leaving space between each.
- Bake for 13 minutes or until the edges are golden but the centers appear slightly under-baked.
- Allow the cookies to sit on the hot baking sheet for 5 minutes before transferring to a cooling rack.
Notes
Store cookies in an airtight container at room temperature for up to 1 week; refrigerate for 2 weeks; freeze for 3 months.
