Ingredients
- 1 prepared pie crust
- 1 cup honey
- 1/4 cup sugar
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, combine the honey and sugar. Cook over medium heat, stirring constantly, until the mixture turns a deep amber color. Remove from heat and let cool slightly.
- In a bowl, whisk together the eggs, heavy cream, sea salt, vanilla extract, and lemon juice.
- Gradually add the cooled honey mixture to the egg mixture, stirring constantly.
- Pour the filling into the prepared pie crust.
- Bake in the preheated oven for about 35-40 minutes or until the filling is set and the edges are slightly puffed.
- Allow the pie to cool before serving.
Notes
Serve chilled or at room temperature. Top with whipped cream and fresh lemon zest for added flavor.
