Description

Delicious cookies that merge the rich sweetness of brown sugar with the robust flavor of coffee, ideal for any time of day.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup raw sugar (for topping)
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and regular granulated sugar until fluffy and well combined.
  3. Incorporate the egg and vanilla extract, mixing thoroughly.
  4. In a separate bowl, combine the all-purpose flour, instant coffee granules, baking soda, and salt. Ensure they are mixed well.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring diligently until a dough forms.
  6. Using a spoon, drop rounded spoonfuls of dough onto a baking sheet lined with parchment paper, ensuring adequate spacing between them.
  7. Generously sprinkle raw sugar on top of each cookie to enhance the flavor and texture.
  8. Bake in your preheated oven for 10-12 minutes, or until the edges appear golden brown.
  9. Once baked, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 1 week or refrigerate them for up to 2 weeks to maintain freshness.
