Ingredients
- 1 can black beans, drained and rinsed
- 1 cup rice
- 1 pound sausage (smoked or Italian)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth or water
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions and minced garlic, and sauté until translucent.
- Add sausage and cook until browned.
- Stir in rice, black beans, chicken broth, cumin, and paprika.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Season with salt and pepper to taste, and serve warm.
Notes
