Ingredients
- 1 cup Biscoff cookies, crushed
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cookie butter (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well blended.
- In another bowl, combine the crushed Biscoff cookies, flour, baking soda, and salt, stirring until mixed.
- Gradually add the dry mixture to the wet mixture, stirring gently until combined.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10 to 12 minutes, or until the edges are golden brown.
- Allow to cool slightly before topping each cookie with warm cookie butter.
- Let the cookies cool completely before serving.
Notes
